  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp unsalted butter
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • 2 tbsp olive oil

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook the seasoned chicken until browned on both sides. Remove from skillet.
  3. In a pot, combine chicken broth, rice, and salt; bring to a boil. Reduce heat to low and simmer until rice is tender.
  4. In the same skillet used for chicken, melt butter and stir in flour to create a roux. Gradually add milk while stirring until thickened. Mix in additional chicken broth and cheeses until melted.
  5. Return the cooked chicken to the skillet with sauce and simmer for five minutes to meld flavors.
  6. Serve over fluffed rice garnished with chopped parsley.
