  • 2 1/4 cups whole milk
  • 6 egg yolks
  • 1 cup + 2 tbsp granulated white sugar
  • 1/8 tsp salt
  • 1 1/2 tbsp vanilla bean paste
  • 3 1/2 tbsp cornstarch
  • 3 tbsp unsalted butter, cut in cubes
  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup granulated white sugar
  • 1 cup unsalted butter, softened
  • 1 egg
  • 1 tbsp vanilla bean paste
  • 1/2 cup granulated white sugar (for rolling the dough in)
  • 1/2 cup granulated white sugar (for the brulee topping)

Instructions

  1. For the Vanilla Pastry Cream: Heat whole milk and half of the sugar in a saucepan. In another bowl, whisk together egg yolks, remaining sugar, salt, cornstarch, and vanilla bean paste. Slowly whisk the hot milk into the egg mixture to temper it. Return to heat, stirring until thickened. Stir in butter until smooth and cool.
  2. For the Cookie Dough: Cream softened butter with granulated sugar until fluffy. Mix in an egg and vanilla bean paste. Combine flour, baking powder, and salt; gradually add to the wet mixture until just combined.
  3. Preheat oven to 350°F (175°C). Shape cookie dough into balls and roll in sugar before placing on parchment-lined baking sheets.
  4. Bake for about 9 minutes until edges are golden. Cool slightly before making an indentation on top of each cookie to fill with pastry cream.
  5. Top each filled cookie with granulated sugar and caramelize using a kitchen torch or broiler until golden brown.
