  • 1.52 lbs fresh green beans (trimmed and cut into 2–3" pieces)
  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb smoked turkey sausage (sliced into rounds)
  • 1/2 cup butter
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon pepper

Instructions

  1. Prepare: Add halved potatoes to a large crock pot and season with pepper and half of the Cajun seasoning.
  2. Add Butter: Place the stick of butter on top of the potatoes.
  3. Layer Vegetables: Add green beans and diced onion over the potatoes, then sprinkle with remaining Cajun seasoning.
  4. Finish with Sausage: Layer sliced turkey sausage on top.
  5. Cook: Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once an hour.
  6. Adjust Seasoning: Taste before serving to adjust seasoning if necessary.
  7. Serve Warm: Keep on warm setting until ready to serve.
