- 1.5 – 2 lbs fresh green beans (trimmed and cut into 2–3" pieces)
- 1.5 lbs small potatoes (halved)
- 1 large onion (diced)
- 1 lb smoked turkey sausage (sliced into rounds)
- 1/2 cup butter
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon pepper
- Prepare: Add halved potatoes to a large crock pot and season with pepper and half of the Cajun seasoning.
- Add Butter: Place the stick of butter on top of the potatoes.
- Layer Vegetables: Add green beans and diced onion over the potatoes, then sprinkle with remaining Cajun seasoning.
- Finish with Sausage: Layer sliced turkey sausage on top.
- Cook: Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once an hour.
- Adjust Seasoning: Taste before serving to adjust seasoning if necessary.
- Serve Warm: Keep on warm setting until ready to serve.
