  • 1 lb. boneless, skinless chicken breasts/thighs
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can cannellini beans (drained)
  • 1 (15 oz.) can great northern beans (drained)
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp lime juice
  • 2 cups chicken broth
  • 8 oz. softened cream cheese

Instructions

  1. Gather all ingredients; chop onions and mince garlic.
  2. In the slow cooker, combine diced green chiles, both types of beans, onion, garlic, cilantro, lime juice, cumin, oregano, salt, black pepper, and chili powder.
  3. Place chicken on top of the mixture and cover with sauce.
  4. Cook on low heat for 7 hours or high heat for 4 hours.
  5. Shred the chicken inside the pot using two forks and stir until well combined before serving.
