  • 2 large chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, undrained
  • 1 can (10 oz) Rotel tomatoes with green chilis, undrained
  • 1 packet ranch seasoning mix
  • 1 teaspoon ground cumin
  • 8 ounces cream cheese
  • ½ cup water

Instructions

  1. Spray the bottom of your slow cooker with nonstick cooking spray.
  2. Place the chicken breasts in the crockpot.
  3. Add the black beans, corn, Rotel tomatoes, ranch seasoning mix, ground cumin, and water. Stir well.
  4. Place the cream cheese on top without stirring.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 4 hours until the chicken is thoroughly cooked.
  6. Shred the chicken in the crockpot using two forks and stir until combined.
  7. Serve hot with your choice of toppings.
