  • 1 cup raisins (soaked in apple juice)
  • ½ cup zante currants
  • 1 small apple (shredded)
  • Zest from one fresh orange (or lemon)
  • Juice of one orange or lemon + apple juice

Instructions

  1. Gather all ingredients. Soak raisins overnight in apple juice if desired.
  2. Cream together the butter and dark brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then fold in flour, baking powder, and mixed spices.
  4. Stir in bread crumbs, sultanas, raisins, currants, shredded apple, and citrus zest.
  5. Add the citrus juice mixture topped with apple juice.
  6. Grease a pudding basin and transfer the mixture into it, smoothing the top.
  7. Cover tightly with parchment paper and aluminum foil.
  8. Steam in boiling water for about 6 hours, ensuring consistent water levels.
  9. Cool slightly before serving.
