  • 500 g Beef mince
  • 2 tsp Sunflower oil
  • 1 Onion (chopped)
  • 1 tsp Mild chilli powder
  • 1 tsp Sweet smoked paprika
  • 2 tsp Ground cumin
  • 3 tbsp Tomato puree
  • 4 Large tortillas
  • 250 g Microwave rice pouch
  • 200 g Fresh salsa
  • 400 g Black beans (drained and rinsed)
  • 125 g Grated mozzarella

Instructions

  1. Heat sunflower oil in a frying pan over medium heat. Add beef mince, browning for about 5 minutes while breaking it apart.
  2. Stir in chopped onion and spices (chili powder, paprika, cumin); cook for an additional 5 minutes until onions soften.
  3. Mix in tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Cover and simmer for 15 minutes; add water if needed.
  4. Prepare tortillas and microwave rice as per package instructions.
  5. Assemble burritos by placing warm tortillas on a flat surface; layer rice, beef mixture, salsa, black beans, and grated mozzarella evenly before rolling tightly.
