  • 1 tablespoon lemon zest (from about 2 lemons)
  • 1¾ cups sugar
  • 4 large eggs
  • ½ cup salted butter

Instructions

  1. Prepare a double boiler by filling a medium-sized saucepan with 2 inches of water and bringing it to a simmer over medium-low heat.
  2. In a heatproof mixing bowl, whisk together the lemon juice, lemon zest, sugar, and eggs until well combined. Add the diced butter.
  3. Place the bowl over the simmering water. Whisk continuously for about 20-25 minutes or until thickened (170°F) and coats the back of a spoon.
  4. Strain the mixture through a fine mesh sieve into a glass bowl to remove lumps.
  5. Cover with plastic wrap pressed directly onto the surface and let it cool at room temperature before refrigerating for at least 4 hours or overnight.
