  • 3 tbsp olive oil
  • 1 15 oz can of tomato sauce
  • 1 48 oz chicken broth
  • 1 8 oz chicken broth
  • 2 14.5 oz cans of fire-roasted tomatoes
  • 1 15 oz can of white cannellini beans (drained & rinsed)
  • 2 8 oz packages of tortellini (cheese or spinach)
  • 8 chicken sausage links (cut into rings about 1/8 inch thick)
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 cup spinach
  • 1 1/2 tsp basil
  • 2 tsp salt
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Chile Con Carne Seasoning
  • 1 tbsp arrowroot powder + 2 tbsp warm water
  • 1/2 cup half & half

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Sauté diced onion and minced garlic until fragrant (3–4 minutes). Add sliced chicken sausages and season with cumin and basil; cook for an additional 2–3 minutes.
  2. Stir in tomato sauce, fire-roasted tomatoes, chicken broth, remaining spices, and bring to a boil. Cover and reduce to simmer for 1–3 hours.
  3. Add tortellini; return to boil then simmer for 5 minutes until tender.
  4. Mix in fresh spinach and drained beans. Thicken with arrowroot powder slurry; stir continuously until desired thickness is achieved.
