  • 3/4 lb top sirloin cubes

  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 tablespoons chives

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium-high heat.
  3. Season beef cubes with salt and pepper, then brown them in the skillet for about 6-8 minutes.
  4. Add chopped onion and carrots; cook until tender, around 4-5 minutes.

  8. Meanwhile, boil potatoes until tender, mash with milk, sour cream, cheese, and chives until smooth.
