Fall Harvest Salad is a vibrant and nourishing dish that captures the essence of autumn. This delightful salad combines roasted sweet potatoes, crisp apples, and savory chicken, all brought together in a creamy orange vinaigrette.   • 2 cups diced sweet potatoes
  • 6 cups mixed greens
  • 1 ½ cups shredded chicken
  • 1 cup diced apple
  • 2 tablespoons dried cranberries
  • 2 tablespoons pumpkin seeds
  • ¼ cup orange vinaigrette
  • ½ tablespoon olive oil
  • salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with olive oil, salt, and pepper. Spread on the baking sheet and roast for 25–35 minutes until fork-tender.
  3. While the sweet potatoes roast, prepare the dressing by combining all dressing ingredients in a jar and shaking well.
  4. Chop mixed greens and dice apples into bite-sized pieces.
  5. Once sweet potatoes are done, let them cool slightly before combining with greens, chicken, apples, goat cheese, pumpkin seeds, cranberries, and dressing in a large bowl. Toss gently to combine.
