  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth (or vegetable broth for vegetarian version)
  • Fresh thyme

Instructions

  1. Caramelize the Onions: In a cast iron skillet, heat butter and olive oil over medium heat. Add sliced onions, salt, pepper, and sugar. Cook until golden brown and sweetened (about 15-20 minutes), stirring occasionally. Add garlic powder and thyme halfway through.
  2. Preheat Oven: Set your oven to 375°F (190°C).
  3. Layer Potatoes: Grease your baking dish with butter. Layer half of the potato slices in the dish, followed by half of the caramelized onions and half of both cheeses.
  4. Repeat Layers: Add another layer with the remaining potatoes, followed by the rest of the onions and cheeses.
  5. Mix Cream Ingredients: In a bowl, whisk together heavy cream (or milk), salt, pepper, and fresh thyme until well combined.
  6. Assemble & Bake: Pour cream mixture over layered potatoes. Cover with foil and bake for about 45 minutes; remove foil and bake an additional 15-20 minutes until golden brown.
  7. Garnish & Serve: Let cool slightly before garnishing with fresh thyme sprigs or extra Parmesan if desired.
