  • 3 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cloves garlic (minced)
  • 2 cups rotini pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Velveeta (cubed)
  • 1 cup shredded mozzarella
  • 1 cup grated Parmesan
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat.
  2. Add the chicken pieces and season them with Cajun seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  3. Cook the chicken for 6-8 minutes, turning occasionally until golden brown and cooked through.
  4. Add the butter and minced garlic. Stir to coat the chicken in garlic butter, then remove it from the pan and set aside.
  5. In the same pan, pour in the chicken broth and bring it to a simmer.
  6. Stir in the rotini pasta.
  7. Cover and cook over medium heat for 10-12 minutes, stirring occasionally until the pasta is tender and most of the liquid is absorbed.
  8. Reduce heat to low.
  9. Stir in the heavy cream, Velveeta cubes, and Parmesan.
  10. Mix until Velveeta is fully melted, resulting in a creamy sauce.
  11. Add the cooked chicken back into the pan.
  12. Stir to coat everything evenly in the cheesy sauce.
  13. Sprinkle mozzarella evenly over the top of your dish.
  14. Cover again and let sit for 2-3 minutes until cheese is melted and gooey.
  15. Garnish with chopped parsley before serving hot.
