200g shrimp, peeled & deveined
1 tbsp butter
1 garlic clove, minced
1 tsp paprika
1 cup white rice (jasmine or basmati)
2 cups water
1 cup broccoli florets
1 cup cauliflower florets
1 cup diced carrots
Salt & pepper to taste
Instructions
Cook the rice by rinsing under cold water until clear. In a saucepan, bring water to a boil, add rice and salt, cover, and simmer for 15 minutes until fluffy.
Steam broccoli, cauliflower, and carrots for 5-6 minutes until tender-crisp. Toss with olive oil or butter and season with salt and pepper.
In a skillet over medium-high heat, melt butter and sauté garlic until fragrant. Add shrimp, paprika, salt, and pepper. Cook for about 2-3 minutes per side until pink.
Serve by arranging rice, shrimp, and vegetables on a plate.
