  • 8 chicken drumsticks
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped
  • 6 tbsp olive oil (3 for chicken, 3 for veggies)
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. In a mixing bowl, combine the chicken drumsticks with olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper. Toss to coat.
  3. In another bowl, mix the cubed potatoes, chopped carrots, and red bell pepper with olive oil, salt, and pepper until evenly coated.
  4. Spread the veggies on a baking tray and nestle the seasoned chicken among them.
  5. Roast everything in the preheated oven for 40-45 minutes until the chicken is golden brown and cooked through (internal temperature should reach 75°C/165°F) and veggies are tender.
  6. Garnish with fresh parsley before serving.
