  • 1 ribeye or sirloin steak (810 oz)
  • 1 cup baby or Yukon gold potatoes, cubed
  • 1 cup green beans, trimmed
  • 1 tbsp olive oil
  • 1 tsp garlic powder or 1 clove minced garlic
  • Salt & freshly cracked black pepper
  • ½ tsp paprika
  • Optional: fresh rosemary or thyme

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, toss cubed potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
  3. Season steak generously with salt, pepper, and garlic powder. Heat skillet over medium-high heat, add olive oil or butter, then sear the steak for 3-4 minutes on each side for medium-rare. Let rest for 5 minutes before slicing.
  4. In the same skillet or another pan, sauté green beans in olive oil with a pinch of salt and garlic powder for about 5-6 minutes until tender-crisp.
  5. Serve sliced steak alongside crispy potatoes and green beans.
