  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Wash and halve the baby potatoes. Mince the garlic.
  2. Rub chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes (if using).
  3. Layer halved potatoes in the bottom of the crockpot and place seasoned chicken on top.
  4. Pour chicken broth over the ingredients.
  5. Sprinkle minced garlic and grated parmesan on top of the chicken.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender (internal temperature should reach 165°F).
