Instructions

  1. Hard-boil the eggs by placing them in a saucepan covered with cold water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes.
  2. Cool the eggs quickly under cold running water and then immerse them in ice water for 10-15 minutes.
  3. Peel the cooled eggs and cut each in half lengthwise to remove yolks.
  4. In a mixing bowl, combine egg yolks, mayonnaise, grated Parmesan, roasted garlic, Dijon mustard, salt, and pepper until smooth.
  5. Fill egg white halves with the mixture using a piping bag or spoon.
  6. Garnish with chopped parsley and optional paprika before chilling for 30 minutes.
