  • 1 teaspoon dried dill or fresh dill
  • 1 ½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic for another minute.
  2. Sprinkle in flour while stirring to form a roux; cook for about 1–2 minutes.
  3. Gradually add broth while stirring to prevent lumps. Incorporate diced potatoes, thyme, dill, salt, pepper, and smoked paprika if using; bring to a boil.
  4. Reduce heat and simmer uncovered for 20–25 minutes until potatoes are fork-tender.
  5. Blend part of the soup with an immersion blender for desired consistency while leaving some chunks.
  6. Stir in almond milk or whole milk along with shredded cheddar cheese until melted; simmer on low for another 5 minutes.
  7. Taste and adjust seasoning as needed before serving hot.
