Ingredients

Scale
  • 1 lb boneless chicken thighs
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill (or 1 tsp dried dill)
  • Salt and pepper to taste
  • Pita bread
  • Sliced tomatoes
  • Sliced red onion
  • Lettuce leaves

Instructions

  1. Marinate the chicken: Combine olive oil, lemon juice, salt, and pepper in a mixing bowl. Add chicken thighs and coat well. Cover and refrigerate for at least 30 minutes.
  2. Prepare tzatziki: Mix Greek yogurt, grated cucumber (squeezed to remove excess water), minced garlic, olive oil, dill, salt, and pepper in another bowl. Whisk until smooth and refrigerate.
  3. Cook chicken: Preheat grill or grill pan over medium-high heat. Grill marinated chicken for about 6-7 minutes on each side until cooked through (165°F internal temperature).
  4. Assemble gyros: Slice cooked chicken into strips. Warm pita bread briefly on the grill or toaster. Spread tzatziki on pita, add sliced chicken, tomatoes, onions, and lettuce.
  5. Serve: Fold pita over fillings and enjoy your homemade Greek Chicken Gyros!
