  • 1 head cauliflower (cut into florets, about 2 lbs)
  • 4 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Juice and zest of one lemon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 oz. crumbled feta cheese
  • 2 tablespoons chopped fresh herbs (dill, mint, basil)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. On a rimmed baking sheet, toss cauliflower florets with 2 tablespoons olive oil, oregano, garlic powder, lemon zest, salt, and pepper until well coated.
  3. Roast for 25-30 minutes, tossing halfway through until golden brown and tender.
  4. Transfer to a serving plate and top with feta cheese and fresh herbs. Drizzle with remaining olive oil and squeeze fresh lemon juice over before serving.
