  • 1 pound flank steak (or strip steak)
  • 3 tablespoons olive oil
  • 3 tablespoons red apple vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 4 large pita bread
  • 1 cup fresh tomatoes, diced
  • 1 cup cucumber, chopped
  • 1 small red onion, thinly sliced
  • Feta cheese for sprinkling (optional)

Instructions

  1. In a mixing bowl, whisk together olive oil, red apple vinegar, garlic, oregano, cumin, salt, and pepper. Add the flank steak and coat evenly in the marinade. Cover and refrigerate for at least 30 minutes.
  2. Preheat your grill or grill pan over medium-high heat.
  3. Remove the steak from the marinade and discard the marinade. Grill for about 4-5 minutes per side until desired doneness is reached.
  4. Let the steak rest for 5-10 minutes before slicing it thinly against the grain.
  5. For the tzatziki sauce, mix Greek yogurt with lemon juice, dill, and a pinch of salt in a bowl.
  6. Warm pita bread on the grill for 1-2 minutes until soft.
  7. Assemble each gyro by layering sliced steak, tomatoes, cucumber, red onion, and tzatziki sauce in each pita.
  8. If desired, sprinkle feta cheese on top before wrapping and serving.
