1 chicken breast
1 medium carrot
45 baby potatoes
A handful of cherry tomatoes
1 cup baby spinach
1 lemon wedge
1 tsp olive oil
Salt, black pepper, garlic powder to taste
Instructions
Boil or steam the chopped carrot and halved baby potatoes for about 8-10 minutes until fork-tender. Season with salt and set aside.
Season the chicken breast with salt, black pepper, and garlic powder. Grill or pan-sear for 5-6 minutes per side until golden brown and fully cooked. Slice into strips.
In a bowl, layer fresh spinach at the bottom. Add the cooked veggies followed by cherry tomatoes and top with grilled chicken strips.
Squeeze fresh lemon juice over the assembled bowl and drizzle lightly with olive oil. Add extra black pepper if desired.
