1 chicken breast, sliced into strips
1 medium sweet potato, cut into wedges
1 avocado, diced
1 tsp olive oil
Juice of lime
Salt, to taste
Pepper, to taste
Paprika, to taste
Garlic powder, to taste
1 small red onion, finely chopped
34 cherry tomatoes, diced
45 cherry tomatoes, halved
Optional: chopped cilantro or parsley for garnish
Instructions
Preheat your oven to 425°F (220°C). Toss sweet potato wedges in olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
While the potatoes roast, season the chicken strips with olive oil, salt, pepper, paprika, and garlic powder. Grill or pan-sear over medium-high heat for 3-4 minutes per side until cooked through.
In a mixing bowl, combine diced avocado, red onion, cherry tomatoes, lime juice, and a pinch of salt. Mash lightly to achieve a chunky texture.
