  • 1 chicken breast, sliced into strips
  • 1 medium sweet potato, cut into wedges
  • 1 avocado, diced
  • 1 tsp olive oil
  • Juice of lime
  • Salt, to taste
  • Pepper, to taste
  • Paprika, to taste
  • Garlic powder, to taste
  • 1 small red onion, finely chopped
  • 34 cherry tomatoes, diced
  • 45 cherry tomatoes, halved
  • Optional: chopped cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato wedges in olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
  2. While the potatoes roast, season the chicken strips with olive oil, salt, pepper, paprika, and garlic powder. Grill or pan-sear over medium-high heat for 3-4 minutes per side until cooked through.
  3. In a mixing bowl, combine diced avocado, red onion, cherry tomatoes, lime juice, and a pinch of salt. Mash lightly to achieve a chunky texture.
  4. Serve the grilled chicken alongside sweet potato fries and top with guacamole.
