  • 1 salmon fillet (about 150g)
  • 2 cups chopped romaine or mixed greens
  • 1 avocado, diced
  • 2 tbsp dried cranberries
  • ½ cup diced tomatoes
  • ½ cup thinly sliced red onion
  • 2 tbsp crumbled feta cheese
  • 1 tbsp chopped walnuts (optional)
  • 1 tsp olive oil
  • 1 tsp dried dill or parsley
  • Salt & pepper, to taste
  • 2 tbsp olive oil (for dressing)
  • 1 tbsp balsamic vinegar (or lemon juice)
  • 1 tsp Dijon mustard

Instructions

  1. Season the salmon with olive oil, dill, salt, and pepper. Grill or pan-sear over medium heat for about 4–5 minutes per side until cooked through. Let it rest for a few minutes before flaking into chunks.
  2. In a large bowl, combine your choice of lettuce, diced avocado, cranberries, diced tomatoes, sliced red onion, crumbled feta cheese, and walnuts if you're using them.
  3. In a small bowl or jar, whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, salt, and pepper until well blended.
  4. Arrange your salad on a plate. Top it with the flaked salmon and drizzle generously with the dressing.
  5. Enjoy your salad immediately while the salmon is warm and the avocado is creamy.
