  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 medium flour or corn tortillas
  • 1 can (10 ounces) enchilada sauce (red or green)
  • 1 ½ cups shredded cheese, cheddar, Monterey Jack, or Mexican blend
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a skillet over medium heat, heat olive oil. Add chopped onion and minced garlic; sauté until softened.
  2. Add ground turkey, cooking until browned. Stir in black beans, diced tomatoes, green chilies, chili powder, cumin, smoked paprika, salt, and black pepper. Cook until heated through.
  3. Preheat the oven to 350°F (175°C). Spread enchilada sauce in a baking dish.
  4. Fill each tortilla with the turkey mixture, roll tightly seam-side down, and place in the baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and sprinkle shredded cheese on top.
  6. Bake uncovered for 25 minutes or until cheese is bubbly and golden.
