  • ¼ teaspoon nutmeg, freshly grated
  • Pinch cloves
  • 1 (15 ounce) can pumpkin puree
  • 1½ cups (175 grams) powdered sugar
  • 23 tablespoons (3045 grams) milk
  • 1 ½ teaspoons vanilla extract

Instructions

  1. In a mixing bowl, whisk together the flour, powdered sugar, cinnamon, and salt.
  2. Add the cold butter cubes and mix until crumbly.
  3. Stir in the milk, egg yolks, and vanilla extract until just combined. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a separate bowl, mix together the brown sugar, cinnamon, nutmeg, cloves, and pumpkin puree until smooth.
  5. Preheat your oven to 375°F (190°C).
  6. On a floured surface, roll out half of the chilled dough to about 1/8 inch thick.
  7. Cut out circles using a large cookie cutter or glass.
  8. Place about a tablespoon of pumpkin filling in the center of each dough circle.
  9. Fold over half of the circle to create a semi-circle shape.
  10. Press edges with your fingers or fork to seal securely.
  11. Place filled pasties on a parchment-lined baking sheet.
  12. Bake in preheated oven for 25 minutes or until golden brown.
  13. In a bowl, combine powdered sugar with milk and vanilla extract until smooth.
