  • 1 cup (100g) instant oats
  • ¾ cup (90g) whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 tsp ground ginger
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • ¼ tsp salt
  • 1 ½ tbsp (21g) unsalted butter or coconut oil, melted and cooled slightly
  • 1 large egg white (room temperature)
  • 1 tsp vanilla extract
  • ¼ cup (60mL) molasses
  • 5 tbsp (75mL) nonfat milk (room temperature)

Instructions

  1. In a medium bowl, whisk together the dry ingredients: oats, flour, baking powder, ginger, cinnamon, nutmeg, cloves, and salt.
  2. In another bowl, mix the melted butter or coconut oil with an egg white and vanilla until combined. Stir in the molasses and milk.
  3. Gradually combine the wet and dry mixtures until just incorporated. Chill dough in the refrigerator for 30 minutes.
  4. Preheat your oven to 325°F (163°C) and line a baking sheet.
  5. Drop rounded scoops of dough onto the prepared sheet, flattening each slightly. Bake for 7-10 minutes until lightly golden.
  6. Allow cooling on the pan before transferring to a wire rack.
