  • 6 tablespoons olive oil
  • 1 large onion, finely chopped
  • 5 large ripe tomatoes, finely chopped
  • 2 garlic cloves, minced
  • 1 small green bell pepper, stem & seeds removed
  • 1 small zucchini, chopped
  • 4 large carrots, peeled and chopped
  • 1 small stick of celery, chopped
  • 2 tablespoons tomato paste
  • 12 sprigs fresh thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and sauté until golden and soft.
  2. Stir in the tomatoes and cook until they become tender and release their juices.
  3. Add the bell pepper, zucchini, carrots, and celery to the pot. Cook for another 5 minutes.
  4. Mix in tomato paste and thyme; stir well. Pour in about 2 liters of water and bring to a simmer.
  5. Partially cover and cook for about an hour until vegetables are tender.
  6. Blend the soup with an immersion blender until creamy.
