  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp freshly cracked black pepper
  • 1 tsp cornstarch + 2 tbsp water (slurry)

Instructions

  1. Heat oil in a skillet over medium-high heat. Add chicken chunks and cook until golden brown and fully cooked (about 6-8 minutes). Set aside.
  2. In the same skillet, lower the heat and combine honey, soy sauce, Dijon mustard, and black pepper. Stir well. Add the cornstarch slurry and simmer for about 12 minutes until thickened. Return chicken to pan to coat in glaze.
  3. Sauté sliced bell pepper and spinach until just tender (2-3 minutes).
  4. In serving bowls, layer cooked rice with glazed chicken, sautéed veggies, and halved cherry tomatoes.
