  • 2 tsp vanilla extract
  • 4 cups confectioner’s sugar
  • Green food coloring (optional)

Instructions

  1. Prepare the Pistachio Paste: In a food processor, pulse shelled pistachios until finely ground. Add heavy cream and pulse until a thick paste forms. Set aside.
  2. Soften the Butter: Allow unsalted butter to soften at room temperature. Beat in a mixing bowl with a stand mixer on medium-high speed for 7 to 9 minutes until fluffy.
  3. Combine Ingredients: Add the pistachio paste and vanilla extract to the whipped butter. Mix until well combined.
  4. Add Confectioner's Sugar: Gradually incorporate confectioner’s sugar on low speed, then increase speed to high and beat for 3 to 4 minutes until light and fluffy. Add green food coloring if desired.
  5. Chill if Necessary: If frosting appears flat, refrigerate for 30 minutes and re-beat until fluffy.
