  • 2 cups beef broth
  • 1 (14-ounce) can crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Sear the beef in olive oil over medium-high heat until browned on all sides. Remove and set aside.
  2. In the same pot, cook onion, carrots, celery, and garlic until softened.

  4. Bring to a boil; reduce heat to low and simmer covered for 3-4 hours until tender.
