Ingredients

Scale
  • 4 large lemons
  • 2 cups granulated sugar
  • 1 cup water
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Wash and dry the lemons thoroughly. Zest them using a zester or grater, then juice the lemons and discard any seeds.
  2. In a heavy-bottomed pot, combine lemon juice, zest, sugar, and water. Stir until the sugar dissolves completely.
  3. Bring the mixture to a boil over medium heat. Once boiling, reduce to a simmer for about 30-40 minutes, stirring occasionally until the jam thickens.
  4. To check for doneness, place a small amount on a cold plate; it should gel slightly after cooling. If not ready, cook for an additional few minutes.
  5. Remove from heat and let cool slightly before pouring into sterilized jars while still warm. Seal tightly and allow to cool completely before storing.
