  • 1 large egg

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • 2 cups fresh spinach (or kale)
  • 1 cup small pasta (ditalini or orzo)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine ground beef or turkey, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, salt, and pepper. Mix until just combined and form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5 minutes; remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened (5–7 minutes). Add minced garlic and cook for another minute.
  4. Pour in crushed tomatoes and chicken or vegetable broth; stir in basil, oregano, and optional red pepper flakes. Bring to a simmer.
  5. Return the meatballs to the pot; let everything simmer for 15–20 minutes until cooked through.
  6. Stir in fresh spinach (or kale) and pasta; cook until pasta is al dente (8–10 minutes). Adjust seasoning as needed.
  7. Serve hot with optional garnishes like grated Parmesan cheese and fresh parsley.
