  • 4 cups chicken broth
  • 2 cups water
  • 3 large potatoes, peeled and diced

  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add Italian sausage, breaking it up with a wooden spoon until browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Stir in red pepper flakes, salt, and pepper; then add chicken broth and water. Bring to a boil.
  4. Add diced potatoes; reduce heat to simmer for about 15–20 minutes until tender.
  5. Return sausage to the pot along with chopped greens; cook until wilted.
  6. Stir in heavy cream; let simmer for an additional 5 minutes before serving.
