  • 2 links spicy Italian sausage (casings removed)
  • 2 leeks (white part only, sliced)
  • 1 fennel bulb (sliced)
  • 1 large parsnip (diced)
  • 1 medium carrot (diced)
  • 1 rib celery (diced)
  • Salt and black pepper
  • 1 tsp Italian seasoning
  • 4 cloves garlic (pressed)
  • 1 can whole tomatoes (28 oz, drained and chopped)
  • 1 can navy beans (15 oz, drained and rinsed)
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Squeeze of lemon juice
  • Gnocchi (optional)

Instructions

  1. If using gnocchi, cook according to package instructions and set aside.
  2. In a large soup pot over medium-high heat, add oil. Brown the crumbled sausage for a few minutes.
  3. Add leeks, fennel, parsnip, carrot, celery, salt, pepper, and Italian seasoning; sauté until vegetables soften.
  4. Stir in garlic until fragrant. Add chopped tomatoes and navy beans, then pour in the chicken broth.
  5. Cover the pot and simmer for about 20 minutes until veggies are tender. Stir in kale and lemon juice before serving.
  6. Serve hot over cooked gnocchi and enjoy!
