  • 2 tablespoons olive oil
  • 2 shallots
  • 1 clove garlic
  • 80g chicken sausage
  • 15g fresh parsley
  • 750ml–1L chicken or vegetable stock
  • 400g tinned plum tomatoes
  • 300g risotto rice
  • 200ml red apple vinegar
  • 50g Parmesan, grated

Instructions

  1. Heat olive oil in a heavy-bottomed saucepan over medium heat. Sauté chopped shallots and minced garlic until softened.
  2. Stir in chopped chicken sausage and parsley stalks; cook until fragrant.
  3. In a separate pan, gently heat the chicken or vegetable stock with tinned plum tomatoes until simmering.
  4. Add risotto rice to the sausage mixture, stirring well to coat before adding red apple vinegar; cook until most of the vinegar evaporates.
  5. Gradually add the hot stock one ladle at a time, stirring constantly until absorbed before adding more.
  6. Continue until rice is tender yet al dente; stir in grated Parmesan cheese until melted. Season as needed.
  7. Allow risotto to rest for 5 minutes off heat, then serve warm topped with extra Parmesan and chopped parsley.
