Ingredients

  • 1 teaspoon olive oil
  • 1 cup cooked quinoa
  • 1 cup canned chickpeas, drained and rinsed
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/8 cup fresh chopped dill
  • 1/8 cup fresh chopped parsley

Instructions

  1. Rinse kale under cold water and dry using a salad spinner or towel.
  2. Chop the kale, place it in a large bowl, drizzle with olive oil, sprinkle with salt, and massage for 1-2 minutes until tender. Let sit for 10 minutes.
  3. Add cooked quinoa, chickpeas, red onion, cucumber, pepitas, golden raisins, dill, and parsley to the bowl.
