  • 1/2 cup unsalted butter, softened for frosting
  • 4 cups powdered sugar, sifted
  • 23 tbsp key lime juice for frosting
  • 1 tsp key lime zest for frosting
  • Pinch of salt for frosting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy (3-4 minutes). Add eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together flour, baking powder, and salt. Combine milk, key lime juice, zest, and vanilla in a measuring cup.
  4. Gradually add dry ingredients to the butter mixture alternately with the milk mixture, starting and ending with dry ingredients. Mix until just combined.
  5. Divide batter between prepared pans and bake for 28-32 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar followed by key lime juice, zest, and salt. Beat until fluffy.
  7. Assemble the cake by layering frosting between cake layers and on top/sides of the cake.
