  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion (finely diced)
  • 8 cloves garlic (crushed)
  • 2 tbsp gochujang
  • 5 green onions (minced)
  • 2 tsp kosher salt
  • 2 large eggs (lightly beaten)
  • 2 tsp vegetable oil
  • 3 tbsp apricot jam
  • 2 tbsp gochujang
  • 1 tbsp rice apple vinegar
  • 1 tbsp honey
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp granulated garlic powder (or 2 cloves garlic, minced)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté minced onions in vegetable oil until translucent; add garlic and cook for another 2 minutes. Let cool.
  3. Mix cooled onion mixture with green onions, gochujang, eggs, and salt.
  4. In a separate bowl, combine ground beef and panko bread crumbs; gently fold in the onion mixture.
  5. Shape into a loaf in a loaf pan or freeform on a cookie sheet.
  6. Bake until internal temperature reaches 140°F (about 40 minutes).
  7. Prepare glaze by mixing glaze ingredients; apply once meatloaf reaches temperature.
  8. Return to oven and bake until internal temperature is 160°F (10–15 more minutes).
