  • 3/4 cup cake flour
  • 1 tsp corn starch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cold, unsalted butter (cubed)
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. Using a stand mixer, cream the cold butter with brown and white sugars until light and fluffy.
  4. Mix in the egg and egg yolk until well combined.
  5. Gradually add the dry ingredients until fully incorporated; fold in chocolate chips.
  6. Measure out six cookie portions (about 5.7 oz each) without flattening them; place on a lined baking sheet.
  7. Bake for 10–12 minutes until golden on top but still soft in the center.
  8. Allow cooling on the baking sheet for at least 15–30 minutes before transferring to a rack.
