  • 1 1/2 cups (300g) granulated sugar
  • 3 Tbsp lemon zest
  • 2 Tbsp fresh lemon juice
  • 1 large egg
  • 3 cups (360g) all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup (50g) sugar (for rolling cookies)

Instructions

  1. In a mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy. Mix in lemon zest and fresh lemon juice followed by the egg until fully combined.
  2. Gradually incorporate all-purpose flour, baking soda, and salt using a spatula until the dough is well mixed.
  3. Cover the dough with plastic wrap and refrigerate for 30-60 minutes.
  4. Preheat the oven to 350°F (175°C). Roll chilled dough into balls and coat with sugar before placing on a silicone-lined baking sheet.
  5. Bake for 11-13 minutes until edges are golden. Allow to cool on the baking sheet for five minutes before transferring to a cooling rack.
