  • ¼ cup lemon juice
  • 2 teaspoons lemon zest
  • 6 tablespoons sugar
  • ¼ cup cold butter
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ¼ cup light brown sugar
  • 6 tablespoons melted unsalted butter
  • 1½ cups all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅓ cup room temperature unsalted butter
  • ¾ cup sugar
  • 2 eggs
  • ⅔ cup Greek yogurt
  • 1 teaspoon vanilla extract
  • grated zest from 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¾ cup powdered sugar
  • milk or cream

Instructions

  1. Prepare the Lemon Curd: In a double boiler over simmering water, whisk together egg yolks, granulated sugar, lemon zest and juice until thickened (about 10 minutes). Remove from heat and whisk in cold butter until melted. Cool completely.
  2. Preheat oven to 350°F (175°C) and line a muffin pan with paper liners.
  3. In one bowl, combine dry ingredients: flour (both types), baking powder, baking soda and salt.
  4. In another bowl, beat room temperature butter until smooth. Gradually add sugar; mix well. Add eggs one at a time followed by vanilla extract, Greek yogurt, lemon zest and juice.
  5. Combine wet and dry ingredients until just mixed.
  6. Fill muffin cups halfway with batter. Add about one tablespoon of cooled lemon curd into each center then top with more batter until three-quarters full.
  7. Bake for about 25 minutes or until golden brown.
  8. Prepare glaze by mixing powdered sugar with milk or cream to desired consistency; drizzle over cooled muffins.
