  • 2 Tbsp brown sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup unsalted butter (for glaze)
  • 1/2 cup pure maple syrup
  • 1/4 tsp ground cinnamon (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare your loaf pan(s) with parchment paper.
  2. In a small bowl, mash bananas with brown sugar, vanilla extract, and ground cinnamon until smooth.
  3. In a large bowl, cream softened butter and sugar until light and fluffy using a hand mixer.
  4. Beat in eggs until fully combined.
  5. In another bowl, sift together flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  6. Fold in the banana mixture until incorporated.
  7. Pour batter into prepared pans and bake: For two 8×4 pans: 35-40 minutes or for one 9×5 pan: Bake at 350°F for 30 minutes then reduce to 325°F for an additional 15-20 minutes.
  8. Cool in pans for 10 minutes before transferring to a wire rack.
