  • 2 tablespoons olive oil
  • pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • ½ cup sun-dried tomatoes (drained and sliced thin)
  • 3 teaspoons garlic (minced)
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 cup parmesan cheese (finely shredded)
  • 2 cups baby spinach (chopped)

Instructions

  1. Season the chicken with black pepper, Italian seasoning, and paprika. Set aside.
  2. In a large skillet over medium-high heat, heat olive oil and cook the seasoned chicken for about 6-8 minutes until golden brown. Remove and set aside.
  3. In the same skillet, reduce heat to medium-low. Melt butter, add garlic and sun-dried tomatoes; sauté for about 30 seconds.
  4. Pour in chicken broth and heavy cream; whisk continuously until bubbling. Gradually stir in parmesan cheese until melted.
  5. Return chicken to the skillet along with spinach and frozen tortellini. Stir occasionally until spinach wilts slightly; simmer for about 5 minutes.
  6. Serve hot, garnished with fresh parsley and extra parmesan if desired.
