  • 1 grilled chicken breast, sliced
  • 2 eggs
  • 1 avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple vinegar or lemon juice
  • Salt & black pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil the eggs for 7-8 minutes until hard-boiled. Cool in ice water, then peel and quarter.
  2. In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes.
  3. Top the salad base with sliced grilled chicken breast, avocado slices, quartered eggs, crumbled feta cheese, and Kalamata olives.
  4. Drizzle olive oil and apple vinegar (or lemon juice) over the salad. Season with salt, black pepper, and optional chopped parsley before serving.
