  • 1½ cup orzo pasta
  • 4 cups vegetable broth (or more if necessary)
  • 1 cup frozen peas
  • ¾ cup grated parmesan (or non-dairy cheese)
  • 3 tablespoons unsalted butter (or non-dairy butter)
  • 2 tablespoons fresh parsley (chopped)
  • 1 lemon (optional zest and juice)
  • ½ teaspoon salt (and black pepper to taste)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 3–4 minutes until softened, then add grated garlic and cook briefly until fragrant.
  2. Stir in sliced mushrooms, seasoning with salt and pepper. Sauté for 5–7 minutes until browned.
  3. Add orzo pasta, stirring frequently for 1 minute to toast it lightly.
  4. Pour in vegetable broth, bring to a simmer, cover, and cook for about 5 minutes while stirring occasionally.
  5. Incorporate frozen peas and cook for an additional 1–2 minutes until heated through. Stir in grated parmesan, butter, parsley, lemon zest, and juice off heat until creamy.
