  • 1/4 cup unsalted butter, room temperature
  • 1/2 cup full-fat sour cream, room temperature
  • 1/4 cup water, room temperature
  • 1/4 cup freshly squeezed orange juice
  • 1 large egg, room temperature
  • 1 tsp vanilla extract or vanilla bean paste
  • optional: orange gel food coloring
  • 1 1/4 cup all-purpose flour or gluten free flour blend
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • For the Orange Curd Filling: 1/3 cup granulated sugar
  • 1 Tbsp orange zest – zest of 1 large orange
  • 2 large egg yolks or 1 large egg
  • 3 Tbsp freshly squeezed orange juice
  • 1/4 tsp fine salt
  • 2 Tbsp unsalted butter, cut into small pieces
  • For the Orange Frosting: 1 cup unsalted butter, room temperature
  • 1 Tbsp orange zest – zest of 1 large orange
  • 1 tsp vanilla extract or vanilla bean paste
  • 1/4 tsp fine salt
  • 3 1/2 cups powdered sugar
  • 3 Tbsp fresh orange juice

Instructions

  1. Preheat oven to 350°F (180°C) and line muffin tin with cupcake liners.
  2. In a bowl, mix sugar and orange zest until fragrant. Add butter, then sour cream, water, fresh juice, egg, and vanilla; combine well.
  3. Gradually add flour, baking powder, and salt; mix until just combined.
  4. Pour batter into muffin tin and bake for 19 minutes or until a toothpick comes out clean. Cool completely on wire racks.
  5. Prepare the orange curd filling by whisking together sugar, zest, egg yolks, juice, and salt over medium heat until thickened; mix in butter until melted.
  6. For frosting, beat butter until fluffy, gradually add powdered sugar, then vanilla, salt, and juice; mix until smooth.
  7. Core cooled cupcakes, fill centers with curd, and pipe frosting on top.
