  • 1 can (15 ounces) diced tomatoes
  • 4 cups vegetable or chicken broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 cup small pasta (like ditalini or elbow)
  • Salt and pepper to taste
  • ¼ cup freshly grated Parmesan cheese (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until the onion is translucent.
  2. Stir in carrots and celery; cook for about 5 minutes until softened.
  3. Add oregano, thyme, and bay leaf; cook for one more minute until fragrant.
  4. Pour in diced tomatoes with juices; stir well.
  5. Add broth; bring to a boil over high heat.
  6. Reduce heat to simmer; cook for about 15 minutes.
  7. Stir in beans and pasta; cook until pasta is al dente (8-10 minutes).
  8. Season with salt and pepper to taste; remove bay leaf before serving.
  9. Serve hot, garnished with grated Parmesan cheese and parsley.
