  • 1/2 teaspoon freshly ground black pepper
  • 1 cup fresh cilantro leaves
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 whole jalapeño chiles, roughly chopped
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon or lime juice
  • 1 cup jasmine rice
  • 1 tablespoon butter/oil
  • 1/4 cup onion, diced
  • 23 garlic cloves, minced
  • 1 teaspoon turmeric
  • 1/4 teaspoon EACH cumin, onion powder, salt, pepper
  • 2 cups chicken stock
  • 1 cup frozen peas

Instructions

  1. Marinate the chicken in minced garlic, lime juice, oil, cumin, smoked paprika, salt, and pepper for at least 1 hour.
  2. Preheat the grill to medium-high heat or oven to 450°F.
  3. Cook the marinated chicken until it reaches an internal temperature of 165°F (approximately 5-7 minutes per side on the grill or about 30 minutes in the oven).
  4. Rinse jasmine rice until water runs clear; sauté onion and garlic in butter before adding rice and spices. Add chicken stock and cook covered on low heat for 15 minutes.
  5. Blend cilantro, mayonnaise, sour cream, jalapeños, garlic, oil, lemon juice, salt, and pepper until smooth to make the green sauce.
